About the Anchovies
Yes, there are anchovies in this recipe. Before you skip past — they do NOT taste like the anchovies on a pizza. They dissolve completely and give the dressing that deep, savory flavor that makes a Caesar dressing taste like a Caesar. Don’t leave them out.
Ingredients
- 2 large eggs
- 2 tsp pepper
- 4 tsp Dijon mustard
- 1 can anchovies (2 oz)
- 1 cup grated parmesan cheese (Cello brand from Costco recommended)
- 1 cup olive oil or avocado oil
- 2 tbsp oregano
- 4 tbsp lemon juice
- 4 tbsp apple cider vinegar
- 4 tbsp white vinegar
- 4 cloves garlic (or pre-chopped from jar)
- Salt to taste: ~2 tsp table salt or 1 tsp kosher salt (add last)
Directions
- Add all ingredients to a Nutri-Bullet, blender, or food processor.
- Pulse or blend until smooth — usually less than 1 minute.
- Taste. Add salt only if needed — the anchovies and parmesan are already salty.
- Transfer to a jar and refrigerate. It will thicken in the fridge — just add a little water to loosen.
